My periods disappeared, I struggled with chronic fatigue and thyroid dysfunction. At the time, I was stuck in a cycle of restrictive diets and intense exercise, believing I was taking care of myself. In reality, my body was in survival mode, running on stress hormones like cortisol while starving for essential nutrients. This experience showed me just how important hormonal health is, sparking my passion to rebuild my body with real nourishment.
I found my way to ancestral nutrition, an approach focused on whole-animal foods like organ meats, bone broth, and collagen, nutrient powerhouses that modern diets often lack. Organ meats, especially liver, became essential in restoring Vitamin A, iron, and B12, all of which are critical for thyroid function, energy production, and hormone regulation. Alongside this, bovine collagen has become a cornerstone of my routine, helping repair my gut lining and support skin, joint, and connective tissue health, areas often impacted by hormonal imbalances and chronic stress.
Organised is a simple way for me to nourish these systems daily by making these nutrients accessible and easy to make into delicious recipes.
One of my favorite ways to unwind is by making a bedtime chamomile and raw milk panna cotta, a soothing ritual that prepares my body for deep, restorative sleep.
Chamomile helps lower cortisol by interacting with GABA receptors in the brain, promoting relaxation and reducing anxiety, while raw honey provides a gentle source of glucose to stabilise blood sugar overnight, preventing cortisol spikes that can disrupt sleep.
Raw milk adds essential calcium, magnesium, and B vitamins, all crucial for nervous system function, calcium supports neurotransmitter release, magnesium calms the body, and healthy fats slow glucose absorption, keeping energy steady.
Furthermore, the combination of Organised and gelatine nourishes the body with glycine, which repairs the gut lining, lowers body temperature, and promotes deep sleep, and proline, which aids in tissue repair and strengthens connective tissues.
Hormone-Balancing Raw Milk & Chamomile Panna Cotta Ingredients:
- 2 cups raw milk
- 1 cup raw cream
- 2 tbsp Organised
- 1/3 cup honey
- Vanilla bean
- 3 tsp gelatine
- 2 tbsp dried chamomile flowers (or 2 chamomile tea bags)
- Pinch of sea salt
- Bloom gelatine: In a saucepan, sprinkle gelatine on top of cold milk. Allow to bloom (dissolve) for 5 minutes
- Infuse the milk: Gently heat the milk and steep the chamomile for 5-7 minutes. Strain the flowers or remove the tea bags.
- Sweeten: Stir in the honey, vanilla, and a pinch of salt
- Incorporate collagen: In a separate cup, whisk Organised with some milk and pour into saucepan
- Chill: Pour the mixture into serving containers and refrigerate for at least 4 hours, or until set.
